Recipe Ingredients for soy roasted vegetables

3 carrots
2 large potatoes
2 celery stalks
1 zucchini
1/2 cup frozen corn
1/2 cup frozen peas
2 tablespoons low-sodium soy sauce
2 tablespoons safflower oil
1 tablespoon thyme

Recipe Directions for soy roasted vegetables

  1. preheat oven to 350 degrees

  2. peel and chop carrots, potatoes, and zucchini

  3. mince or press garlic

  4. mix all vegetables together in pan

  5. add soy sauce, honey then oil

  6. cook for 30 minutes and stir

  7. cook for another 30 minutes

  8. serve over rice, quinoa, or pasta
