Low-Carb Pumpkin Cookies with soy flour.

Recipe Ingredients for Soy Pumpkin Cookies

3/4 cup soy flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1 tsp pumpkin pie spice
1/4 tsp salt
1/4 cup country crock
1/2 tsp imitation vanilla
1 cup canned pumpkin
1 serving Egg
2 tbsp Super Stevia Extract
1 tbsp Super Stevia Extract
1 1/2 tablespoons heavy whipping cream
1 1/2 teaspoon country crock
1/2 teaspoon imitation vanilla extract

Recipe Directions for Soy Pumpkin Cookies

  1. Preheat oven to 350F

  2. Line cookie sheet with parchment paper, or nonstick baking liner.

  3. In small bowl combine dry ingredients.

  4. Cream butter and stevia. Add pumpkin, egg, and vanilla and beat until creamy. Add dry ingredients.

  5. Roll in your hand to make ball walnut-sized.

  6. Bake in for 15-20 mins.
