from The Whole Soy Cookbook This fruity, crunchy granola is substantially lower in fat than most commercial varieties - and offers the extra bonus of soy protein. Serve it with cold soy milk or as a topping for soy yogurt or soy-based frozen desserts. It will keep up to two weeks, refrigerated in an airtight container.

Recipe Ingredients for Soy Nut Granola

1 cup honey
1 tbsp vegetable oil
1 1/2 tsp vanilla extract
6 cups rolled oats
1 cup soy nuts
1 cup wheat germ
1 cup oat bran
1 cup raisins
1 cup dried apples
1 cup dried papaya

Recipe Directions for Soy Nut Granola

  1. Preheat the overn to 350 degrees and line 2 baking sheets with parchment paper.

  2. In a large mixing bowl, with a wire whip, whisk the honey, oil, and vanilla together until thoroughly combined. Add the rolled oats, soy nuts, wheat germ, and oat bran, mixing well.

  3. Spread the mixture on the baking sheets and bake for 20 minutes, until golden brown. Remove from oven. When the mixture has cooled completely, add the dried fruits. Store in an airtight container.
