Tapioca pudding made with low-fat soy milk

Recipe Ingredients for Soy Milk Tapioca

1/3 cup sugar
3 tbsp tapioca
2 3/4 cups light soy milk
1 egg, well beaten
1 tsp vanilla

Recipe Directions for Soy Milk Tapioca

  1. Mix sugar, tapioca, milk and egg in medium saucepan; let stand 5 minutes.

  2. Cook on medium heat, stirring constantly, until mixture comes to a full boil.

  3. Remove from heat.

  4. Stir in Vanilla

  5. Cool for 20 minutes before serving.
