This is a vegan version of the versatile condiment. Use it in any way you'd use the original - from sandwich spread to salad dressing. (Contains soy)

Recipe Ingredients for Soy Mayonnaise

6 ounces firm silken tofu
1 1/2 tablespoons white wine vinegar
1/4 teaspoon dry mustard
1/2 teaspoon salt
1/8 teaspoon sugar or natural sweetener (optional)
3 tablespoons corn oil or other neutral-tasting oil

Recipe Directions for Soy Mayonnaise

  1. Place the tofu, vinegar, mustard, salt, and sugar (if using) in a food processor or blender and process until smooth. With the machine running, slowly add the corn oil in a thin stream through the feed tube until it is incorporated. Taste and adjust the seasonings.

  2. Transfer to a glass jar or other container with a tight-fitting lid. Cover and refrigerate until ready to use, up to 4 to 5 days.

  3. Makes about 1 cup. (servings are per tablespoon, but you can use less if desired)
