Soy-Glazed Pork, Carrots, and Cabbage

Recipe Ingredients for Soy-Glazed Pork, Carrots, and Cabbage

1 tablespoons vegetable oil
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 Kosher salt
1 1/2 pounds red cabbage, sliced into 1/2 inch strips
1 1/2 pounds carrots, cut into 2-inch lengths (thick pieces halved lengthwise)
10 ounces center cut pork chops
4 scallions, thinly sliced
1 tablespoons rice vinegar
1 teaspoons toasted sesame oil

Recipe Directions for Soy-Glazed Pork, Carrots, and Cabbage

  1. Heat broiler. Using a broilerproof rimmed baking sheet, set rack 4 inches from heat;

  2. In a large bowl, whisk together vegetable oil, soy sauce, and 1 teaspoon salt. Add cabbage and carrots; toss to coat.

  3. With a slotted spoon, transfer cabbage and carrots to sheet. Push carrots to one side.

  4. Working with a few pieces at a time, add pork to marinade in bowl; turn gently to coat, and transfer to sheet. Reserve bowl with marinade.

  5. Broil until carrots are tender and pork is browned, turning pork halfway through cooking time and tossing carrots occasionally, 30 to 35 minutes.

  6. Transfer pork, cabbage and carrots to reserved bowl with marinade. Add scallions, vinegar, and sesame oil; toss gently to combine.
