Corn muffins made with wheat germ, flax seed and soy milk!

Recipe Ingredients for Soy Corn Muffins

1 cup unbleached white flour
1/2 cup cornmeal
1/2 cup wheat germ
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 stick butter
3 tablespoons water
1/2 serving flaxseed meal
1 cup vanilla soy milk

Recipe Directions for Soy Corn Muffins

  1. Preheat oven to 400 degrees. Grease a 12-cup cupcake sheet.

  2. Mix flour, cornmeal, wheat germ, sugar, baking powder and salt in a bowl and make a well in the center.

  3. Mix flaxseed (it should be 1 tablespoon) and the water in a bowl and let them sit for 2 minutes. Melt the butter.

  4. Mix the melted butter, flax/water mixture and soy milk in a bowl.

  5. Dump liquid mixture into dry mixture and stir until just combined. Batter may be lumpy.

  6. Distribute into cupcake sheet cups. Bake on 400 degrees for 15-20 minutes until outsides are brown!
