Recipe Ingredients for Soy Amaranth Blueberry Muffins

1 cup milk
3/4 cup amaranth flour
3/4 cup soy flour
1/2 cup flour
1 tbsp baking powder
1 tsp salt
1/4 cup sugar
3/4 cup blueberries
1/4 cup egg beaters
1/4 cup vegetable oil

Recipe Directions for Soy Amaranth Blueberry Muffins

  1. In large bowl mix together soy, amaranth, and white flour with salt, sugar, and baking powder.

  2. In small bowl mix egg beaters, blueberrries, vegetable oil, and milk.

  3. Add egg mixture to flour mixture, stir until lumpy batter results.

  4. Bake 20-25 minutes until golden at 400F.
