Recipe Ingredients for Soutwestern Black Bean Quesadillas

2 cups black beans, canned and drained
1 cup cooked white rice
1/2 cup corn
1/4 cup sun-dried tomatoes
1 tbsp cumin
1 tsp tabasco sauce
2 tsp garlic, sauted
1 salt and pepper to taste
1 cup monterey jack cheese
1/2 cup mozzarella cheese
1/2 cup cheddar cheese
6 servings of tortillas

Recipe Directions for Soutwestern Black Bean Quesadillas

  1. Add beans, rice, corn, tomatoes, cumin, tabasco, salt and pepper to a large bowl and stir gentley to combine ingredients.

  2. In another bowl, combine the different cheeses.

  3. The bean mixture is to then be dispursed equally into 6 tortilla shells. Top with cheese, fold tortilla, and bake at 350 until bubbly and golden, or fry on a stove top until center of quesadilla is warm and gooey.

  4. Uncooked quesadillas can be individually wraped in foil and frozen. They must thaw completley before use.
