Recipe Ingredients for Southwestern Zucchini Casserole

1 1/4 pound of zucchini, cubed
1/2 pound of Monterey Jack cheese
1/2 pound of Sharp Cheddar cheese
2 teaspoons of baking powder
3 tablespoons of flour
4 eggs, beaten
1/2 cup of milk
1/2 teaspoon of salt, optional
4 ounce of green chilies
3 tablespoons of butter

Recipe Directions for Southwestern Zucchini Casserole

  1. Boil zucchini in salted water 5 minutes. Drain and cool.

  2. Mix remaining ingredients with zucchini (*except butter).

  3. Pour into a 9 inch square pan.

  4. Dot with butter.

  5. Bake at 350F. for 30-35 minutes. (Use more chilies if desired.)
