Recipe Ingredients for southwestern veggie soup

32 oz. tomato juice, canned, no salt added
1/4 cup carrots, diced
1/4 cup celery, chopped
1/2 cup green pepper
1/2 cup mushrooms
1 tbsp jalapeno, diced
2 tbsp minced garlic
3 cups beef bouillon
1/2 cup corn, whole kernel
1/2 cup black-eyed peas
1 taco seasoning

Recipe Directions for southwestern veggie soup

  1. combine all veggies, except peas and corn in pot with 1/2 tsp olive oil

  2. cook until onions are tender

  3. add tomato juice and beef broth

  4. add peas and corn

  5. cook for about 1 hour until blended and veggies are done
