I am trying to make a copy of Progresso Southwestern-style Vegetable Soup.

Recipe Ingredients for Southwestern Vegetable Soup

1 T olive oil
1/2 cup carrots, chopped
1/2 cup celery, chopped
1/2 green pepper, chopped
1 cup onion, chopped
8 cups water
6 chicken bouillon cubes
1/2 cup brown rice, uncooked
14 oz. Seasoned corn and beans (I use Pictsweet--frozen at Wal-mart)
14 oz. rotel tomatoes
1/2 t cumin
1/2 t chili powder
1 t dried cilantro

Recipe Directions for Southwestern Vegetable Soup

Saute the carrots, celery, green pepper, and onion in the olive oil over medium heat until tender. Add the water and the bouillon cubes and bring to a boil. Add the brown rice and simmer until it is cooked. Finally, add the corn and beans, tomatoes, and spices and simmer for about 10-15 minutes.
