1 tbsp Chili Powder
2 cup, chopped or sliced Tomatoes, Red, Ripe
15 oz Black Beans
1 cup, chopped Peppers, Sweet, Green
1/2 medium raw Onion Yellow
3/4 cup Rice, Brown, Medium-grain
1/2 medium Squash, Summer, All Varieties
2 teaspoon Cumin, Ground
1 tsp Salt, Table
4 serving, raw Cilantro
1/2 cup Shredded Cheese
12 oz ground turkey
1 tbsp olive oil

Recipe Directions for Southwestern Vegetable Skillet - Katrina'

  1. 1. Cook rice according to package instructions.

  2. 2. Cook the turkey and half the chili powder and half the cumin in a 10-inch skillet over medium-high heat until the meat is well browned, stirring often to separate meat. Pour off any fat. Set aside.

  3. 2. Turn down heat to medium and heat oil. Cook peppers, onions, and squash until tender. Add tomatoes, beans, and the remaining seasonings in the skillet until tomatoes tender. Simmer for 3-5 min. Remove the skillet from the heat.

  4. 4. Sprinkle with the cheese and fresh cilantro. Serve over rice.
