Ground turmeric gives this egg-free scramble a golden hue. Also makes a great sandwich filling.

Recipe Ingredients for Southwestern Tofu Scramble

1 medium raw Bell Pepper Red
1 medium raw Carrots
4 medium (4-1/8" long) Onions, Spring Or Scallions
14 oz Medium Firm
3 serving Turkey Bacon
2 slice Bread, Rye
1 clove Garlic

Recipe Directions for Southwestern Tofu Scramble

  1. Heat large nonstick skillet over medium heat and coat with cooking spray.

  2. Add bell pepper and carrot, and cook until just tender.

  3. Stir in green onions, garlic, 1/2 tsp. ground cumin, and 1/4 tsp. ground turmeric. Cook for 1 minute.

  4. Add tofu and 1/2 tsp hot sauce.

  5. Cook until liquid has cooked off.

  6. Serve.
