Recipe Ingredients for Southwestern Tofu Scramble

2 tsp olive oil
1 small carrot, diced (about 1/2 cup)
1 medium red bell pepper, diced (about 1 cup)
1 small zucchini, sliced into half-moons
4 green onions, chopped (about 1/2 cup)
1 clove garlic, minced (about 1 tsp.)
1 tsp ground cumin
1/4 tsp ground turmeric
7 oz firm tofu, pressed, drained and crumbled
1/2 tsp hot sauce (or to taste)
2 tbsp chopped cilantro

Recipe Directions for Southwestern Tofu Scramble

  1. Saute the carrots and bell pepper in the olive oil. When the carrots are tender but still crisp, add the zucchini, onions, garlic, cumin, and turmeric. Cook for another minute.

  2. Add the tofu and and hot sauce. Mix well and let cook approximately five minutes, until all liquid is absorbed, and the scramble is heated through.
