4 serving Organic Free Range Chicken Broth
1 serving Extra Virgin Olive Oil
1 large Onions
1 cup, diced Celery
1 cup, chopped Carrots
9 cup (8 fl oz) Water
0.5 cup Pearled Barley
0.33 cup dry Dried Black Beans
0.33 cup Select Dried Great Northern Beans
0.33 cup Organics Red Kidney Beans Dry
1 tbsp Chili Powder
1 tsp Cumin
0.5 tsp Oregano
0.5 tsp Sea Salt

Recipe Directions for Southwestern three-bean and barley soup

Heat oil in Dutch oven over med. heat. Add onion, celery and carrot. Cook, stirring occasionally, until softened, about 5 min. Add water, broth, barley, beans, and spices. Bring to a boil over high heat. Reduce heat and simmer, stirring occasionally, until beans are soft. Approx 2.5 hrs.
