Recipe Ingredients for Southwestern Stuffed Portobellos

1 lb boiled chicken
12 oz. portabello mushrooms
2 cup cooked brown rice
1/2 cup celery - diced
1/4 cup carrots - diced
1/2 cup onions - diced
1/4 cup green chiles
2 cloves garlic
1/4 cup cilantro - chopped
1/2 cup black beans - drained
1/2 cup canned corn - drained
1 tbsp hot sauce
1/4 cup salsa
3 cups green enchilada sauce
1 tsp. butter
1 tsp. olive oil
1/2 pound iceberg lettuce
1/4 cup olive oil
1 oz lime juice
1/2 cup cilantro
1/4 cup balsamic vinegar

Recipe Directions for Southwestern Stuffed Portobellos

  1. Cook brown rice using salsa in place of the same amount of water

  2. Sautee all vegitables and garlic in butter and oil except portabello, green chiles and cilantro

  3. Mix vegitable mix, brown rice, cilantro, black beans, hot sauce, and chicken together

  4. top the portabellos with mixture

  5. grill until portabello is tender

  6. top with enchilada sauce

  7. Dressign - blend olive oil, cilantro, lime juice and balsamic vinegar until it holds together
