Southwestern Stuffed Acorn Squash Recipe

This is a great fall dish, loaded with taste as well as plenty of nutrients - and surprisingly filling. From "Eating Well" magazine (Sept/Oct 07 issue). I also added red pepper flakes.

Recipe Ingredients for Southwestern Stuffed Acorn Squash

3 acorn squash
5 oz turkey sausage
1 small onion, chopped
1/2 medium red bell pepper, chopped
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon cumin, ground
1 1/2 cups cherry tomatoes, chopped
15 oz black beans, rinsed
1/2 tsp salt (optional)
5 dashes hot sauce
1/2 cup cheese, shredded (swiss and/or cheddar)

Recipe Directions for Southwestern Stuffed Acorn Squash

  1. Preheat oven to 375 F. Lighly coat large baking sheet with cooking spray.

  2. Cut squash in half horizontally. Scoop out and discard seeds. Place squash cut side down on prepared baking sheet. Bake until tender, about 45 minutes.

  3. Meanwhile, lighly coat large skillet with cooking spray, heat over medium heat. Add sausage and cook, stirring & breaking up with wooden spoon, until lightly browned, 3 to 5 minutes. Add onion & bell pepper; cook, stirring often, until softened, 3 to 5 minutes. Stir in garlic, chili powder and cumin; cook for 30 seconds. Stir in tomatoes, beans, salt and hot sauce, scraping up any browned bits. Cover, reduce, heat and simmer until the tomatoes are broken down, 10 to 12 minutes.

  4. When squash are tender, reduce oven temp to 325 F. Fill squash halves with turkey mixture. Top with cheeses. Place on baking sheet and bake until filling is heated through and cheese is melted, 8 to 10 minutes.
