Recipe Ingredients for Southwestern Steak Stew

1 1/2 lb. stew beef or chuck steak cut into chunks
28 oz. Progresso whole peeled tomatoes with basil, undrained (can also use regular canned tomatoes & add dried basil.
2 medium onions, chopped
1 tsp. chili powder
2 oz. taco seasoning mix
15 oz. Progresso black beans, rinsed & drained
15 oz. whole kernel corn (or mexicorn ? with red & green peppers), drained
1 c. carrots, sliced
1 c. celery, sliced

Recipe Directions for Southwestern Steak Stew

  1. Prep time: 10 min.; Cook time: 9 hrs. in slow cooker; 2-2½ hrs. in oven (dutch oven pan) 5 -6 servings

  2. Slow Cooker Directions (takes 9 hrs.)

  3. Mix beef, tomatoes, onion and chili powder in 3½ to 4-quart slow cooker.

  4. Cover and cook on low heat setting about 9 hours or until beef is tender.

  5. Stir in taco seasoning mix with wire whisk.

  6. Stir in beans and corn.

  7. Cover and cook on high heat setting 15-30 min or until thickened.

  8. Oven Directions (takes 2-2½ hrs.)

  9. Heat oven to 350°F

  10. Mix beef, tomatoes, onion and chili powder in a 4 Qt. Dutch oven

  11. Cover and bake 1½ hours, stirring once

  12. Stir in taco seasoning mix

  13. Stir in beans and corn.

  14. Cover and bake 30-45 min. more

  15. NOTES: I use the oven method but start by sautéing the onions & browning beef in the dutch oven, then adding tomatoes and chili powder. Cover, transfer to oven to bake, following the rest of the recipe above.

  16. Wonderful, hearty & delicious Fall/Winter meal! Serve with Italian garlic bread, Sprinkle low-fat cheese on top or add a dollop of low fat sour cream if desired. Definitely a keeper!
