Southwestern casserole. Easy to make and makes two casseroles. One to eat right away and one to freeze for later.

Recipe Ingredients for Southwestern Shepherd's Pie

3 lbs. ground beef
1 cup chopped onion
20 ounces enchilada sauce
2 tbsp. all purpose flour
1 tsp. ground cumin
1 tsp. dried oregano
2 1/2 cups water
2 cups skim milk
0.33 cups butter
1 tsp. salt
4 cups mashed potato flakes
2 cans chopped green chillies
16 ounces shredded cheese
22 ounces Mexicorn
0.66 cups chopped green onions

Recipe Directions for Southwestern Shepherd's Pie

  1. cook beef and onion over medium heat until meat is no longer pink; drain. Add the enchilada sauce, flour, cumin and oregano; bring to a boil. Reduce heat; simmer, uncoverd, for 5 minutes.

  2. Meanwhile, in a large sucepan, combine the water, milk, butter and salt; bring to a boil. Remove from the heat. Stir in potato flakes until combined. Add chilies and 1 cup cheese.

  3. Transfer meat mixture to two greased 11 in. x 7 in. baking dishes. Layer with corn, masted potato mixure and remaining cheese. Sprinkle with green onions. Cover and freeze one casserole for up to 3 months. Cover and back the remaining casserole at 375 for 20 minutes. Uncover and bake 5-10 minutes longer or until bubbly. Sprinkle with paprika.

  4. To use frozen casserole: Thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Cover and back at 375 for 20 minutes. uncover and back for 15 to 20 minutes longer or until bubbly. Sprinkle with paprika. 2 Casseroles 7 servings each.
