Recipe Ingredients for Southwestern Salad with Black Beans

0.5 avocado, NS as to Florida or California Avocados
0.75 cup Coriander Leaves
4 oz Fat Free Zero Yogurt
2 large Onions, Spring Or Scallions
1 clove Garlic
0.5 fl oz Lime Juice
0.5 tsp Sugars, Granulated
0.5 tsp Salt, Table
3 oz Field Greens
0.5 cup Beans, Black, Mature Seeds
1/2 cup Corn, Sweet, Yellow
8 cherry Tomatoes, Red, Ripe

Recipe Directions for Southwestern Salad with Black Beans

  1. Place avocado, cilantro, yogurt, scallions, garlic, lime juice, sugar and salt in a blender; blend until smooth.

  2. Place greens in an individual salad bowl; toss with 2 tablespoons of the dressing. (Refrigerate the remaining dressing.) Top the greens with black beans, corn and tomatoes.
