Southwestern Roll-Ups Recipe

Recipe Ingredients for Southwestern Roll-ups

5 whole wheat low-carb tortillas (6" fajita size)
3 oz cooked, shredded chicken breast
1/2 cup canned black beans, drained
1/2 cup canned corn, drained
3/4 cup Mexican or Pepperjack shredded cheese
1 1/2 cups frozen spinach, thawed and drained
1 1/2 tbsp red pepper flakes (or more or less to taste)

Recipe Directions for Southwestern Roll-ups

  1. Preheat oven to 400d

  2. Combine chicken, beans, corn, cheese, red pepper, and spinach in microwave safe bowl.

  3. Heat for 30-45 seconds in microwave.

  4. Heat tortillas for 20 seconds in micowave.

  5. In the center of each tortilla, place an equal amount of the chicken mixture.

  6. Fold in the sides of each tortilla and roll up

  7. Place seam side down on a baking sheet sprayed with non-stick cooking spray

  8. Bake for 6-7 minutes.

  9. Turn over and bake for another 6-7 minutes.

  10. Remove from oven and cut each roll in half

  11. Serve with Ranch or Southwestern salad dressing as a dipping sauce
