A simple selection of vegetables with taco seasoning mix, roasted, is a trouble-free Southwestern side. Vegetable leftovers can be put into a soup pot with some chicken broth for a great Southwestern vegetable soup.

Recipe Ingredients for Southwestern Roasted Vegetables

4 cups sweet potatoes (yams) , cut into 1-inch cubes
1 1/2 cups zucchini, cut into small chunks
1 small red onion, cut into small chunks
6 ounce portabella mushrooms, halved. I use baby portabellas sliced in halves
2 tablespoons olive oil
3 tablespoons taco seasoning mix - reduced sodium, (about half of a 1 1/4 ounce packet)

Recipe Directions for Southwestern Roasted Vegetables

  1. Preheat oven to 425 degrees. Line a baking sheet with foil and coat with nonstick cooking spray.

  2. In a large bowl, combine the sweet potatoes, zucchini, onion, and mushrooms. toss with the olive oil to coat the vegetables. Sprinkle with taco seasoning and salt (if using). Spread the vegetables on the baking sheet.

  3. Bake for 40 minutes, shaking the pan every 15 minutes, until the vegetables are tender and roasted.
