Roasted vegetables with reduced sodium taco seasoning mix turn a simple selection of vegetables into an easy to fix Southwestern side dish. Mix leftover vegetables with some chicken broth to make a Southwestern vegetable soup.

Recipe Ingredients for Southwestern Roasted Vegetables

4 cups sweet potatoes (yams), partely peeled, cubed, cut into approximately 1 inch cubes
1 1/2 cups zucchini, cut into small chunks
1 small red onion, cut into chunks
6 ounce portabella mushrooms, cut into halves. I've used baby portabella mushrooms
2 tablespoons olive oil
3 tablespoons taco seasoning mix (reduced sodium), about 1/2 a regular package - 1 1/2 ounce package. Salt to taste. I've used Mrs Dash season

Recipe Directions for Southwestern Roasted Vegetables

  1. Preheat oven to 425 degrees (hot oven). Coat a baking sheet with non-stick cooking spray or foil.

  2. In a large bowl, mix yams, zucchini, onion, and mushrooms. Toss with olive oil to coat the vegetables. Sprinkle taco seasoning, add salt or salt substitute (if using). Spread vegetables on the baking sheet.

  3. Bake for 40 minutes, shaking the pan every 15 minutes untill vegetables are tender and roasted.
