Recipe Ingredients for Southwestern Rice

1 medium green pepper, diced
1 medium onion, chopped
2 garlic cloves, minced
1 tablespoon olive or canola oil
14 1/2 oz chicken broth
1 cup uncooked long grain rice
1/2 teaspoon ground cumin
1/8 teaspoon ground turmeric
15 ounce black beans, rinsed and drained
10 ounce diced tomatoes and green chilies, undrained
10 ounce frozen corn, thawed

Recipe Directions for Southwestern Rice

In a large nonstick skillet, saute the green pepper, onion and garlic in oil for 3 minutes. Stir in the broth, rice, cumin and turmeric; bring to a boil. Reduce heat; cover and simmer for 15 minutes or until rice is tender. Add beans, tomatoes and corn; heat through.
