Recipe Ingredients for southwestern quinoa

3 cups cooked quinoa (1 cup dry)
3/4 cup chopped red pepper
1/2 cup chopped onion
1/2 tsp fresh garlic
14 ounce can black beans, low sodium, rinsed
1 cup frozen corn
2 chili peppers, roasted, seeded and chopped
1 tsp cumin
1/2 tsp chili powder
1/2 tsp oregano
1 dash black pepper
1 tbsp olive oil

Recipe Directions for southwestern quinoa

  1. Cook quinoa according to directions

  2. Chop veggies, saute in olive oil

  3. Add garlic

  4. When onions become clear, add corn, beans chilies and spices

  5. Mix in with quinoa when it finishes cooking. serve immediately.

  6. may add a dash of ground red pepper if you like it spicier.
