1 cup (uncooked) Quinoa
3 1/2 cup Black Beans
2 clove Garlic
1 medium (2-1/2" dia) Onions
100 grams Peppers, Sweet, Yellow
1 small Peppers, Sweet, Red
2 cup Natural Goodness Chicken Broth
1 diced tomatoes

Recipe Directions for Southwestern Quinoa Bake

  1. Pre-heat oven to 375

  2. Chop up vegetables/garlic and sautee in medium sauce pan

  3. Add quinoa, black beans, low sodium chicken broth, 1 can diced tomatoes with onion and pepper (del monte) and sauteed veggies into a glass oven safe casserole dish and bake for 1 hour covered in foil
