Nice somewhat spicy egg dish. I used 24 servings so I could tell how much each cup was.

Recipe Ingredients for southwestern quiche

8 large Egg, Whole
1 cup Ricotta, Part Skim Milk Cheese
6 oz Monterey Jack Cheese
1/4 cup Cilantro
1 serving Ground Cumin Spice
1 dash Salt, Table
1 dash Pepper, Black
8 oz Black Beans
5 serving Mild Green Chiles

Recipe Directions for southwestern quiche

Beat eggs and Ricotta, add monterey jack cheese, then add green chiles, cilantro, cumin, beans, salt, and pepper. Mix all ingredients well. Distribute mixture evenly in 24 muffin cups. Bake at 350 degrees for 30 min or until set. Let sit for 5 min. Can garnish with salsa, sour cream, or avocado.
