Southwestern Quiche Recipe

A yummy filling quick and easy quiche with a southwestern flair. Could easily feed 6-12 people with a side dish such as soup or salad or even as an appetizer.

Recipe Ingredients for Southwestern Quiche

1 tortilla, hemp
6 oz ground turkey
1 serving 2% american cheese (1 slice)
1 oz nuefchatel cheese
1 cup frozen cut leaf spinach
7 medium raw mushrooms
3/4 cup frozen bell peppers
1/4 cup frozen onions
1 tbsp milk
3/4 cup diced tomatoes and chilies, canned
5 large egg whites
1 large egg
1/2 cup shredded reduced fat cheddar cheese
1 tbsp cumin
1/2 tsp paprika
1 tsp marjoram
1 tsp cayenne pepper

Recipe Directions for Southwestern Quiche

  1. Spray pie plate.

  2. Place tortilla in middle of bottom of plate.

  3. Cook turkey with 1/2 the spices (just guess).

  4. Place turkey on tortilla. Turkey should not be along edge of plate.

  5. Place small pieces of american and nuefchatel cheese on meat.

  6. Mix 1 egg white and pour around edge (this will make a crust of sorts)

  7. Cook veggies except tomotoes with remaining spices and place on top.

  8. Pour tomatoes on top.

  9. Mix remaining eggs and milk. Pour evenly on top of dish.

  10. Sprinkle cheddar on top.

  11. Bake at 350 degrees for 30 min.
