This started as bean soup and evolved into a southwestern vegetable soup, almost stew.

Recipe Ingredients for Southwestern pinto bean soup

2 cups celery, chopped
2 cups carrots, chopped
1 1/2 cups onion, chopped
5 cups pinto beans, with cooking liquid
4 cloves garlic, diced
2 cups sweet potato, diced
1 cup corn
1/4 cup jalapeno, diced
1 cup roasted red pepper
15 oz. can diced tomatoes
3 quarts water
1 tbsp. dried parsley
2 tsp. cumin

Recipe Directions for Southwestern pinto bean soup

  1. Soak beans overnight, drain, cook until tender, reserve liquid.

  2. Saute celery, carrots, onion, and garlic, add remaining ingredients and simmer until tender.
