A quick salad that can be thrown together with already stored pantry items. Can also add grilled sliced chicken breast and shredded cheese.

Recipe Ingredients for southwestern pantry salad

2 cups iceberg lettuce
1/3 cup canned corn
1/3 cup black beans
1/2 cup avacado
1 tomato
1/2 red onion
1/2 tbs light sour cream
1/2 tbs light ranch dressing
1/2 cup salsa

Recipe Directions for southwestern pantry salad

  1. Cook the onions, corn, and black beans in a skillet using a few sprays of cooking spray until the onions become slightly translucent.

  2. Add cooked mixture to lettuce. Top with tomatoes and cheese (optional), avacado slices, and chicken (optional), and sour cream. Mix ranch dressing and salsa together and pour over salad.

  3. *If the chicken and cheese are added, this will also add to the caloric intake as the recipe does not include the calories for either of these ingredients.
