Southwestern Omlet with light sour cream

Recipe Ingredients for Southwestern Omlet

2 eggs
1 tbs milk
1/3 cup onion
1/2 cup green pepper
4 tbs. salsa
3 tbs. light sour cream
3 tsp olive oil

Recipe Directions for Southwestern Omlet

  1. Chop and fry onions and green peppers in 1 tsp olive oil

  2. Mix eggs and milk with onion owder and garlic

  3. Revove peppers and onions from pan and reduce to low heat

  4. Cook eg mixture on one side then flip

  5. Add onions and peppers, black bean salsa and sour cream

  6. Fold omlet closed and serve
