Lower sodium, lower cholesterol, lower fat version of a traditional southwestern fritata but with great taste and half the calories and fat.

Recipe Ingredients for Southwestern Ham Fritata

4 serving Great Value Original Liquid Eggs
4 ring (3" dia, 1/4" thick) Peppers, Sweet, Green
2 ring (3" dia, 1/4" thick) Peppers, Sweet, Red
1 slice, large (1/4" thick) Onions
4 medium Mushrooms
1 pepper Peppers, Jalapeno
1/4 tsp Sodium-Free Salt
1 tsp Pepper, Black
4 oz Country Made Boneless Ham, Reduced Sodium (Half)
4 serving Southwest Chipotle Salt-Free Seasoning Blend
1 stalk, medium (7-1/2" - 8" long) Celery
1 tbsp Parsley
0.75 cup, shredded Colby Cheese
2 oz Brown Rice Flour
1 tbsp Corn Starch
1 pat (1" sq, 1/3" high) Butter

Recipe Directions for Southwestern Ham Fritata

  1. Preheat oven to 375 degrees.

  2. Dice all the vegetables (except for mushrooms) into small bits and place in a microwave bowl. Microwave covered for 1-1:30 minutes to soften the vegetables slightly.

  3. Dice the low sodium ham and set aside.

  4. Pour eggs, vegetables, ham, rice flour, corn starch and seasoning into a bowl and fold into eggs until dry ingredients are mixed.

  5. Spray quiche pan with non-stick spray or rub bottom and sides with 1 tbsp of unsalted butter.

  6. Pour mixture into quiche pan. Sprinkle with shredded colby cheese, seasoning, pepper, parsley and chopped mushrooms. Bake at 375 degrees for 25-30 minutes until center is solid and does not stick to knife inserted.

  7. Serves: 4
