Recipe Ingredients for Southwestern Fajita Quiche

1/4 pound boneless skinless chicken breast cut into 1/2 inch pieces
1/2 green bell pepper
1/2 red bell pepper
1 small onion cut into 1 in strips (1 sm=1/3 cup)
1 cup egg beaters
1 cup fat free milk
1/2 teaspoon ground cumin
1 cup reduced fat mexican cheese
4 flour tortillas (whole wheat)

Recipe Directions for Southwestern Fajita Quiche

  1. 1. Preheat oven to 350 Spray medium skill withcooking spray.

  2. 2.Add chicken, cook and stir 3 minutes, or until chicken is no longer pink. Stir 2 minutes, or until vegetables are crisp-tender.

  3. 3.combine Egg Beaters, milk and cumin in large bowl. Add cheese, mix lightly

  4. 4.Spray 9-inch pie plate w/ cooking spray. Place tortellas in pie plate to form. Carefull pour Egg Beater mixture into tortilla crust. Bake 40 minutes or unild knife is clean. Cool on rake 10 minutes befor servingb.
