Southwestern Crock Pot Sweet Potato and Corn Medley

Recipe Ingredients for Southwestern Crock Pot Sweet Potato and Corn Medley

1 1/2 lbs sweet potatoes
16 oz corn
1/4 cup onion, chopped
4 T lime juice
1 tsp chili powder
1/2 tsp salt
3 T basil, fresh, chopped

Recipe Directions for Southwestern Crock Pot Sweet Potato and Corn Medley

Peel and cube the sweet potato into 1-inch or so chunks. Plop them into the crock. Add diced onion, the drained corn, and the fresh basil leaves. Sprinkle in the chili powder and salt. Squeeze the limes, and then toss everything so the seasoning is dispersed somewhat evenly. Cover and cook on low for 5 hours, or on high for 3-4. This is done when the potatoes have reached desired tenderness.
