I made this using leftover chicken legs that went to a BBQ but never got cooked. Recipe makes 22 1-cup servings. 3 Weight Watchers Points per cup.

Recipe Ingredients for Southwestern Chicken Vegetable Stew

3 1/2 cups Chicken Broth
3 1/2 cups water
1 1/2 cups barley
1 1/2 pounds black beans, (about 3 cups)
1 cup corn
15 oz Crushed Tomatoes
1/2 cup carrot
1/2 cup celery
1/4 cup shallot
2 cloves garlic
1/2 tbsp paprika
1/2 tbsp cumin
1 tbsp black pepper
1 tbsp sage
1/2 pound chicken legs, skinless
1 onion
1 cup broccoli, (stems only)
1 tbsp thyme
1 tbsp parsley

Recipe Directions for Southwestern Chicken Vegetable Stew

  1. Put black beans in a large bowl and cover with water. Set bowl aside.

  2. Add skinless chicken legs,chopped carrot, chopped celery, chopped onion, chopped broccoli stems, one whole shallot, 2 garlic cloves, sage, parsley, thyme and pepper to slow cooker. Cook 8 hours.

  3. Remove chicken from slow cooker; take the meat off the bones, discard the bones and set aside the meat.

  4. Drain stock into a bowl; set aside veggies, return the stock to the slow cooker and cook down until there's only about 3-3 1/2 cups of liquid left.

  5. Blend stock and veggies; add this mixture and the chicken meat back to the slow cooker.

  6. Drain and rinse soaked black beans; add beans to the slow cooker.

  7. Add barley, corn, crushes tomatoes, water, paprika and cumin to the slow cooker.

  8. Stir cooker contents, cover and cook until beans are done. If cooking on high, stew will be ready in 4-6 hours; cooking on low, it will finish between 8 - 10 hours.

  9. Monitor cooking periodically to salt the stew; if allowing the stew to cook unmonitored, add at least 2-3 Tbsp of salt at the start of the cook time, and salt to taste as necessary when eating the finished stew.
