Lighten up the sandwich traditionally served on french toast by using cinnamon raisin bread. Skip buttering the bread by using cooking spray. Shred the cheese to let a small amount go further and melt easily. Add zing with jalepeno jelly.

Recipe Ingredients for Southwestern Chicken

8 slices bread
8 ounces cooked chicken breast
4 ounces shredded cheddar cheese
4 tablespoons jelly
1 cooking spray

Recipe Directions for Southwestern Chicken

  1. Heat a non-stick skillet over medium high heat.

  2. Spread 1/4 tablespoon jalepeno jelly onto each slice of bread.

  3. Layer the cheese and chicken onto 4 slices of bread and top with remaining bread slices.

  4. Spray the outside of the sandwich with cooking spray; spray the skillet with cooking spray.

  5. Place sandwich on hot skillet, toast until the cheese is melted.

  6. Cool slightly and cut sandwich in half.
