Recipe Ingredients for SOUTHWESTERN CHICKEN CORN PUDDING

1 cup chicken, cubed and cooked
1 cup frozen whole kernel corn
4 oz green chilis, drained & diced
2 eggs, beaten
2/3 cup skim milk
3/4 cup all-purpose flour
1/4 tsp salt
1/8 tsp pepper
2 oz cheddar cheese, finely shredded

Recipe Directions for SOUTHWESTERN CHICKEN CORN PUDDING

  1. Spray a 9 inch pie plate with nonstick coating. Set aside.

  2. In a medium mixing bowl stir together chicken, corn, and chili pepper. Spread mixture in prepared pie plate.

  3. In the same bowl stir together the eggs and milk. Beat in flour, salt, and pepper. Pour over chicken mixture.

  4. Bake, uncovered, in a 400 degree oven for 25 to 30 minutes or until top is set and lightly browned. Sprinkle cheese on top and bake an additional 2 to 3 minutes. Serve with salsa and sour cream and carnish with fresh cilantro.
