A spin on a basic corn chowder from Mark Bittman, sized up to be a full dinner. May be halved or quartered to be used as an appetizer or side dish.

Recipe Ingredients for Southwestern Chicken and Corn Chowder

2 ears of corn
1 1/2 teaspoons butter
1/2 medium onion, chopped
1 medium potato, peeled and diced
1 tomato, cored, seeded and chopped
1/2 cup milk
1 jalapeno pepper, chopped
1 green pepper, chopped
4 3/5 oz chicken breast

Recipe Directions for Southwestern Chicken and Corn Chowder

  1. Poach chicken just until done. Cut into bite-sized pieces.

  2. Shuck corn. Remove corn from cob using a paring knife. Put the cobs in a large pot with 2 cups of water. Bring to a boil. Cover and simmer as you continue prepping and cooking.

  3. Put butter or in a saucepan, and turn heat to medium-high. When butter melts, add onion, peppers, and potato, along with a sprinkling of salt and pepper. Cook, stirring occasionally, until onion softens, about 5 minutes; add tomatoes and cook, stirring, for another minute or two.

  4. After corncobs have cooked at least 10 minutes, strain liquid into onion-potato mixture; bring to a boil, then lower heat to a simmer. When potatoes are tender, add corn kernels, chicken, and milk, and heat through. Taste, and adjust seasonings. Enjoy.
