Recipe Ingredients for Southwestern Caviar Salmon

14 oz salmon
2 T lime juice
1/2 c cilantro
1/8 c jalapenos
2 t garlic, diced
15 oz corn
15 oz black beans
15 oz tomatoes and green chilies
1/8 t salt

Recipe Directions for Southwestern Caviar Salmon

  1. combine salsa ingredients

  2. cut salmon into 4 equal pieces and place on tinfoil

  3. spoon generous portion of the salsa in top of the fish

  4. close the tinfoil and bake at 350F for 20 to 25 minutes, until fish is visibly done

  5. serve with remaining salsa
