Recipe Ingredients for Southwestern Catfish

3 medium tomatoes, chopped
1/4 cup chopped onion
2 jalapeno peppers, chopped
2 tablespoons white wine vinegar
3 teaspoons salt, divided
3 teaspoons paprika
3 teaspoons chili powder
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
24 ounce catfish fillets

Recipe Directions for Southwestern Catfish

  1. Combine tomatoes, onion, jalapenos, vinegar and 1 tewapoon salt. Cover and regrigerate for 30 minutes.

  2. Combine paprika, chili powder, cumin, coriander, cayenne, garlic powder and remaining salt; rub over catfish. Coat grill rack with cooking spray before starting the grill. Grill fillets, uncovered, over medium heat for 5 minutes on each side or until fish flakes easily with a fork. Serve with salsa.
