Recipe Ingredients for Southwestern Black Bean Salad

15 oz black beans, rinsed and drained
1 1/2 c cooked corn kernels
2 medium avocados
8 c salad greens
4 oz tortilla chips
1/4 c chopped fresh cilantro
1/4 c lime juice
1/4 tsp salt
1/2 tsp red pepper flakes
1/4 c olive oil

Recipe Directions for Southwestern Black Bean Salad

  1. Make the Cilantro Lime Dressing by whisking the cilantro, lime juice, salt, red pepper flakes, and olive oil together in a bowl.

  2. In a bowl, toss the beans and corn with the Cilantro Lime Dressing. Peel and pit the avocados and cut them into wedges or cubes.

  3. Arrange the salad greens on individual servings plates and mound the bean and corn salad in the center. Top with the avocado wedges and ring the bean salad with tortilla chips.
