Recipe Ingredients for Southwestern black bean quinoa salad

1 c quinoa
1 3/4 c black beans
1 cucumber
2 tomatoes
2 jalapeno peppers
4 scallions
3 t lime juice
2 T olive oil
1 t sea salt
1/4 t black pepper
2 c vegetable broth

Recipe Directions for Southwestern black bean quinoa salad

  1. Rinse quinoa - add to pan with with 2 c vegetable broth - bring to boil, lower to simmer for 10-15 until broth is absorbed.

  2. Rinse can of black beans - add to bowl

  3. Dice tomatoes, cucumber, scallions, jalapenos (seeded) - add to bowl

  4. Juice a lime over the bowl, add olive oil, salt and pepper - stir

  5. Add quinoa and stir - makes 8 servings, about 1 c each
