Recipe Ingredients for Southwestern Beef Stew

1 pound beef stew meat, cut into small bites
8 oz black beans, soaked and drained
1 cup uncooked rice
12 oz frozen corn
15 oz tomato sauce
15 oz diced tomatoes
1 onion, diced
2 tsp cumin
1 tsp chili powder
1/2 tsp cayenne pepper
2 tsp salt
5 cups water

Recipe Directions for Southwestern Beef Stew

  1. Brown meat in small amount of oil.

  2. Add onion and salt

  3. Add sauce, diced tomatoes and water, beans, rice and spices.

  4. Bring to boil and reduce to simmer for 2 hours. Will thicken as it cooks.

  5. Add corn and check for seasoning - you may need to add more to get the heat you want, but be careful!

  6. Serve with tortilla chips or sprinkle with shredded cheese.
