Recipe Ingredients for Southwestern Bean & Rice Medley

2 tbsp olive oil
1 medium onion, chopped
1 small red pepper, chopped
2 tsp. chili powder
2 cans (15 3/4 oz. each) beans, red kidney
1/8 tsp. hot sauce (optional)
1 cup canned whole kernel corn
1 1/2 cups rice , cooked

Recipe Directions for Southwestern Bean & Rice Medley

  1. In saucepan heat olive oil for 1 min. Add onion, pepper and chili powder and cook until tender-crisp.

  2. ADD beans, hot sauce, corn and rice. Heat through.
