1/2 c egg beaters
2 T green bell pepper, chopped
2 T cherry tomatoes, chopped
1 tsp jalepeno pepper, minced

Recipe Directions for Southwest veggie scramble

  1. Cooked chopped veggies in microwave for 1 minute & pat dry

  2. Add veggies & egg to mug sprayed with Pam

  3. Cook in microwave for additional 1 1/2-2 minutes
