Recipe Ingredients for Southwest Vegetarian Bake

3/4 c. uncooked brown rice
1 1/2 c. water
15 oz. black beans, rinsed and drained
11 oz. Mexicorn, canned, drained
10 oz. tomatoes, with green chilis, canned, diced
1 c. salsa
1 c. reduced-fat sour cream
1/4 t. pepper
4 oz. reduced fat cheddar cheese, shredded
1/2 c. onion, chopped, red
2 1/4 oz. ripe olives, drained
4 oz. reduced fat cheddar cheese, shredded

Recipe Directions for Southwest Vegetarian Bake

  1. In a large saucepan, bring rice and water to a boil.

  2. Reduce heat; cover and simmer for 35-40 minutes or until tender.

  3. In a large bowl, combine the beans, Mexicorn,tomatoes,salsa, sour cream, cheddar cheese, pepper and rice.

  4. Transfer to a 9X13 baking dish coated with non stick spray.

  5. Sprinkle with onion and black olives.
