This vegan chili is full of fiber and tastes great over a baked potato, in a tortilla or pita bread or served with vegan cornbread!

Recipe Ingredients for Southwest Three Bean Chili

1/4 cup (8 fl oz) Water
1 onion, chopped
3 stalks celery, chopeed
15 oz can kidney beans, drained and rinsed
15 oz can black beans, drained and rinsed
15 oz can pinto beans, drained and rinsed
29 oz Tomato Puree
14 1/2 oz can diced tomatoes
1 tbs maple syrup
2 tbs chili powder
2 tsp ground cumin
1 tsp garlic powder
1 tsp salt
1/2 tsp ground black pepper

Recipe Directions for Southwest Three Bean Chili

Place the wter in a large pot with the onion and celery. Cook, stirring occasionally, for 5 minutes. Add the remaining ingredients. Cover and cook over medium low for 20-25 minutes. Serve at once.
