A southwest-style mix of chicken and vegetables, delicious over rice, tortillas, or cornbread.

Recipe Ingredients for Southwest Stew

1 1/2 lbs boneless skinless chicken breast
3/5 lb red onion, sliced
1 tbsp minced garlic
15 oz tomato sauce
1/4 cup Frank's hot sauce
18 oz beer
2 tbsp Worcestershire sauce
1 tbsp brown sugar
15 oz pinto beans (canned), drained and rinsed
2 cups frozen corn
2 cups spinach
0.07 lb jalapeno
1/2 lb green pepper
1/5 lb red pepper
1/2 lb zucchini
1 tsp cumin
1 tsp dried basil
1 tsp black pepper
1/2 tsp ground nutmeg
1/2 tsp paprika

Recipe Directions for Southwest Stew

  1. Put a large nonstick pot on medium-high heat.

  2. Brown chicken breasts in the pot with onion and garlic.

  3. Pour tomato sauce, Frank's, beer, Worcestershire, brown sugar and beans over chicken. Cover, reduce heat to low, and let simmer.

  4. In a large, nonstick pan, fry the corn, jalapeno, peppers, and zucchini. Once the vegetables are tender, add the spinach and allow it to wilt.

  5. Once the vegetables are tender and browned, remove from heat.

  6. Move chicken breasts from sauce to a large platter. Using two forks, pull apart the chicken into pieces. Do not shred the chicken too finely, or it will dissipate into the stew.

  7. Once the chicken is shredded, add it back to the sauce. Add vegetables and seasonings to sauce and stir.

  8. Cover and let simmer for another 30 minutes, then serve.
