Recipe Ingredients for Southwest Spaghetti Squash

4 cups spaghetti squash (1 spaghetti squash)
14 oz Mexican-style diced tomatoes
14 oz black beans, rinsed and drained
3 1/2 oz Pepper jack cheese, shredded
1/4 cup cilantro, chopped
1 tsp cumin
1/4 tsp garlic salt
1/4 tsp black pepper

Recipe Directions for Southwest Spaghetti Squash

  1. Preheat oven to 350 F. Spray baking pan and 1 1/2-qt baking dish with nonstick cooking spray.

  2. Cut squash in half lengthwise. Remove and discard seeds. Place squash, cut side down, in baking pan. Bake 45-60 minutes or until just tender. Shred hot squash with fork; place in large bowl.

  3. Add tomatoes, beans, 1/2 cup cheese, cilantro, cumin, garlic salt, and pepper; toss well. Spoon mixture into prepared dish. Sprinkle with remaining cheese

  4. Bake, uncovered, 30-35 minutes or until heated through.
